Strawberry, Pineapple & Coconut Smoothie

Gosh, I do love a good smoothie. I had one at a branch of Crussh in London today and er, it wasn't a good smoothie. It wasn't blended very well so it still had horrible "hairy" bits of pineapple in it, it was a very thin consistency and it was room temperature - yuck! Sorry, but to me a smoothie should be nice and cold and have a bit of body to it.

I decided to neutralise that horrible experience by making my own yummy smoothie in my trusty Smoothie 2 Go machine. It's been a really good purchase for me as it was pretty cheap, it blends ice without a problem and you actually make the smoothie in the cup you'll then drink from, so washing-up is minimised. Oh, and I don't get "hairy" pineapple.

I've never actually measured the ingredients for my smoothie before, always going by eye instead. You can see how much I put in from the photo above - I call it an inch of chopped, frozen strawberries, an inch of pineapple with a bit of juice and 7 dessertspoons of coconut milk but I've quantified things a bit better below. The result is a sweet and creamy smoothie with a gorgeous colour. I took this photo just from peering into the blender, haha.

Strawberry, Pineapple & Coconut Smoothie

Ingredients (all measurements approximate)

1/2 cup chopped, frozen strawberries (chop into quarters or more, depending on size and freeze flat to minimise them all sticking together)
1/3 cup canned pineapple pieces in light syrup (include a couple of tablespoons of the syrup)
75ml reduced-fat coconut milk
1 tsp caster sugar (or to taste)

Method

1. Put all the ingredients into a blender that can handle chopping ice/frozen bits and whizz until smooth. Add a little extra coconut milk or soya milk if the mixture is too thick (ie if you pack the cups with fruit - I don't).

Makes: approx 1 cup (250ml) - serves 1
